Classic Margherita Pizza

Naples-style pizza with San Marzano tomatoes, fior di latte, and basil.

Ingredients

  • 250 g 00 flourSubstitute: strong bread flour or all-purpose flour
  • 160 ml water (lukewarm)Substitute: filtered water
  • 5 g sea salt
  • 2 g fresh yeast
  • 120 g fior di latte (torn)
  • 6 basil leaves

Instructions

A demo recipe for classic recipe structure: dough, sauce, topping, high-heat baking and clear allergen tagging.

  1. Mix flour, water, salt and yeast. Knead 10 minutes.
  2. Bulk ferment 18u201324h at room temperature.
  3. Shape balls, proof 4h.
  4. Stretch, top with sauce and mozzarella.
  5. Bake 90s at 450u00b0C (or hottest oven).

For a home oven, preheat the tray or steel as hot as possible and keep toppings light so the base stays crisp.
