- 2 g fresh yeast
- 120 g fior di latte (torn)
- 6 basil leaves
Instructions

- Mix flour, water, salt and yeast. Knead 10 minutes.
- Bulk ferment 18u201324h at room temperature.
- Shape balls, proof 4h.
- Stretch, top with sauce and mozzarella.
- Bake 90s at 450u00b0C (or hottest oven).
For a home oven, preheat the tray or steel as hot as possible and keep toppings light so the base stays crisp.
