Dark Chocolate Mousse

Three-ingredient classic French mousse au chocolat.

Ingredients

  • 170 g dark chocolate 70%
  • 4 eggs (separated)Substitute: pasteurised egg product where suitable
  • 40 g sugarSubstitute: caster sugar or light brown sugar

Instructions

A classic dessert demo for chilled recipes, allergen display and make-ahead serving notes.

  1. Melt chocolate over a bain-marie.
  2. Whip whites with sugar to soft peaks.
  3. Fold yolks into chocolate, then fold in whites.
  4. Chill at least 4 hours.

Use chocolate you would happily eat on its own. The recipe has very few ingredients, so quality shows.
