Mushroom Risotto
Creamy carnaroli risotto with porcini and parmesan.
Ingredients
- 320 g carnaroli rice
- 200 g mixed mushrooms (sliced)
- 1 l vegetable stock (hot)
- 60 g parmesan (grated)Substitute: a similar firm cheese
- 1 shallot (minced)
- 120 ml dry white wine
Instructions
A restaurant-style demo recipe for stirring, timing and optional wine/equipment notes.
- Sautu00e9 shallot and mushrooms in butter.
- Toast rice 2 min; deglaze with wine.
- Add hot stock a ladle at a time, stirring, ~18 min.
- Off heat, mantecare with butter and parmesan.
Add stock gradually and stop cooking when the rice is creamy but still has a small bite.
