Ingredients
- 1 kg pork bones
- 4 eggs (soft-boiled)Substitute: pasteurised egg product where suitable
- 4 ramen noodle nests
- 4 tbsp tare
- 2 scallions (sliced)
Instructions
A complex bowl demo that tests long cook times, equipment, allergens and step grouping.
- Pressure-cook pork bones 2h; strain.
- Build bowls with tare; add hot broth.
- Top with noodles, chashu, egg, scallion.
Prepare toppings while the broth cooks so bowls can be assembled quickly at service.
