Tonkotsu-Style Ramen

Rich pork broth, chashu, soft egg, scallion.

Ingredients

  • 1 kg pork bones
  • 4 eggs (soft-boiled)Substitute: pasteurised egg product where suitable
  • 4 ramen noodle nests
  • 4 tbsp tare
  • 2 scallions (sliced)

Instructions

A complex bowl demo that tests long cook times, equipment, allergens and step grouping.

  1. Pressure-cook pork bones 2h; strain.
  2. Build bowls with tare; add hot broth.
  3. Top with noodles, chashu, egg, scallion.

Prepare toppings while the broth cooks so bowls can be assembled quickly at service.
